
A really easy salad that's easy to prepare and looks stunning! Serves 4.
1/4 pound smoked salmon
1 whole ripe avocado
1/2 red onion, cut into fine dice
1 large fresh red tomato or enough for 6 - 1/3 inch slices
1 large fresh yellow or orange tomato or enough for 6 - 1/3 inch slices
8 individual stalks fresh chives
2 cups loosely packed baby organic greens (optional)
Fresh lime juice
1/3 cup extra virgin olive oil
1-1/2 tablespoons good quality balsamic vinegar
salt and pepper to taste
Preparation
Wash the tomatoes. Slice each into rounds of approximately 1/3 inch thick.
Any thinner than this and the tomato slice is likely to fall apart. Season
with salt and pepper to taste. (If you can't find yellow or orange
tomatoes, subsititute with an additional red tomato)
Peel the avocado. Cut in half and remove the large pit. Slice the halves
into 1/4 inch half-rounds. Season the slices to taste and squeeze the juice
of a quarter lime on the slices to prevent browning.
Dressing
Chop 4 stalks of chives finely, reserving 4 long stalks cut in half for
garnish. In a bowl, add chopped chives, olive oil and balsamic vinegar,
salt and pepper and whisk together. Do not worry if the balsamic vinegar
does not incorporate fully in the mixture.
Assembly
On individual serving plates, place a slice of tomato and then two slices of
the avocado half-rings on top of the tomato slice, ensuring that it is
level. Then layer one slice of smoked salmon on top of the avocado. (You
can roll the smoked salmon slice to fit the diameter of the tower).
Sprinkle a little of the chopped onion on top of the smoked salmon, and
repeat the process, alternating between yellow and red tomato slices.
You should now have a tall, impressive tower of smoked salmon, tomatoes,
onions and avocado. Garnish the top by inserting the chive stalks into the
tower, or by laying them decoratively over top the tower. Drizzle a little
of the dressing over the top of the tower, and around the serving plate.
Complete by sprinkling a few of the chopped onions over the dish. To make
it a little more subtantial, you could add some baby organic greens on the
side.
